For selling Pokemon I stumbled across this formula that I rather like a lot. I made some edits to it but its fairly consistent for accounting for the rarity of a Pokemon and how strong it is. I added on the Level portion to the equation becuase it makes sense that a level 99 Caterpie should be worth more than a level 1. Feel free to adjust this as you need and run some tests on Pokemon in the Pokedex.
I dont think it would be too much since the party has to split the money but if you feel it gets to be too much then you can also have them roll Guile Checks to see what percentage of that money they get. Similar to your example, you have to be a good sales person to sell a Pidgey in a Forest but maybe not as good elsewhere, so you adjust the DC for those different percentages as they come up.

Pokemon Value:
BST*(DtH^2)+Lvl^2

Where:
BST= Base Stat Total
DtH= Days to Hatch
Lvl= Pokemon's Current Level
