So, I am looking to build a Coordinator with Style Expert [Beauty] I want a little bit of battle capability so I am not sure what other classes to take, the main 2 pokemon I am going to focus on are Roserade and Milotic. Pretty open to the other 4 on the team, as long as they don't conflict with the build.

I was thinking stat ace, since most of my pokemon could benefit from it.

Ace Trainer lets you make signature moves, and the Stat Aces tend to synergize well with their contest stat as well. Either one of them will also make your Pokemon better in a fight.
A Channeler or Telepath could be a crowd pleaser via giving silent commands to their pokemon, and both have other utility uses to boot.
Hobbyist is always a good choice, especially if you are otherwise a very focused build.
Either Dancer or Musician could be taken to make you helpful in a crisis while remaining more "beautiful" than a burly Athlete.
Perhaps a Fashionista to prepare your pokemon for the next big show? Keep in mind the production classes have a tendency to turn you into the party gimp, which may or may not be what you are after. I pity the fool that goes Mentor/Chef/Fashionsta/Sage.

Anything else would stray further away from the core concept, but a Mentor or Commander could be easy to fluff. You could always go for the scattered "what were you thinking" build, like go Paleontologist and Taskmaster, or Roughneck and Cheerleader, but since this character seems more organic and centered, even one of such options might be hard to explain away.
And of course, any character concept can benefit from adding Ninja. I mean, whether or not there is any synergy is irrelevant, what matters is that you are a NINJA! You flip out and kill people like no-one's buisness! Is there a conspiracy that forced the judge to give a ribbon to someone else? Not for long!

Would the juggler class be fitting to use?

Juggler wouldn't particularly help any contest features (unless it is a multi-pokemon contest) but it can well complement heavily stylized battling, enabling unusual tactics to make up for the otherwise weakish nature of a coordinator in a battle. On its own, it probably won't let you match a dedicated battle trainer, but it will probably help narrow the gap.
Plus, the Juggler can be quite fun, if you get a good, fast paced volley going. It will require a few team adaptations to fully work, though. You won't need to get rid of anything, or change your mains, but picking up a few Volt/Turners or Baton Passers would be of great benefit. Something like a Beutifly, Vivillion, or Butterfree on the U-Turn side could complement the team theme very nicely, though finding a good, beauty themed Volt Switcher might be tougher. You might have to suck it up and polish something like a Jolteon, Lanturn, or Galvantula into a non-traditional definition of beauty. (Galvantula with a Bishie sparkle just made be chuckle)

Jugglers are somewhat similar to Riders, in that they take a somewhat specialized team makeup to really work well.

What about that electric flying squirrel? Would that work?

I think all electric types bar Tynamo learn it. Whatever you think would work, really. The choice is up to you.

Well, I think my team will probably be this:

Roserade (Battle and contest pokemon)
Staraptor (Battle; yeah odd choice, since it's a physical attacker and I am going Special Attack Ace but I figured I needed one)
Jolteon (Battle; cause I just caught a Modest Nature Eevee)
Kingdra (Battle)
Butterfree (Battle; if one wants to suggest a better bug type that evolves like butterfree does, I am all ears)
I'm not sure what I want for my final pokemon, Milotic could be good but Kingdra is a water type, too, I'm trying to avoid type overlap.

Also, contest moves, I'm not even sure where to start on that....

Edit:

Anyone? I'm still lost on which contest moves I could focus on for my eventual Roserade.
